Cookie Dough Characterization - BachelorMaster Project with Industrial Cooperation Fall 2019

Would you like to make a difference in the world of cookies and cakes? And learn about industrial production of cookies on high end machines?

Then why not put your skills to the test and help us finding out how we best can characterize dough?

We need you to help us learning how various dough parameters impact our dough treatment and cookie/biscuit molding/forming processes and ideally recommend off-the-shelf laboratory equipment.

The Project

When specifying and designing new machines the dough plays a huge role. Dough consists of water, flour, sugar, fat and minor components. Flour varies depending on origin and can vary considerably from region to region.

The objective is to investigate mechanical dough characterization parameters and how they relate to various machine properties such as capacity and power requirements. Furthermore determining and testing capabilities of suitable laboratory equipment will be of direct interest.

 

The project can be a bachelor project or a masters project.

The chance to work with industrial cookie production together with the number one brand in the business.

You will work together with our scientists to discover and measure different machine parameters.

At DTU you will assess different dough characterization methods and the impact of the chemical composition (recipe).

In Skovlunde, Denmark, you will have access to two full baking lines for cookie and cracker test production enabling your experiments.

You are …

Looking for a bachelor/masters project or looking for an internship. You enjoy investigating parameters via experimental work and data analysis. Putting the pieces together and working with both small and large scale equipment is just the kind of challenge you like.

About Bühler

In Late 2017 Bühler acquired Haas-Meincke in Skovlunde. Meincke produces complete high-end cookie baking lines including highly specialized dough forming machinery and ovens.
