Effects of eating quinoa piperine and capsaicin on intestinal permeability and the intestinal immune system

Problem statement

Quinoa has within the last couple of years gained a profound popularity as a “superfood” since quinoa has a high content of essential amino acids, lipids, vitamins and antioxidants. Quinoa does also contain high amounts of saponins – the plants natural pesticide. However, saponins originating from other species have shown to have an effect as adjuvant. Can these compounds in quinoa have an alarming effect on our intestine and the immune system in the intestine?

 

Hypothesis

The main hypothesis of this project is that saponins from quinoa, as well as the active compounds of pepper (capsaicin) and chili (piperine, increase the permeability in the intestine leading to an increased uptake of proteins.

 

Aim of project

The aim of this project is to elucidate the acute effects of specific food components on intestinal permeability and the immune system in the intestine.

 

Methodology

An animal model in Brown Norway rats will be used to examine the acute effects of eating quinoa, piperine and capsaicin. The rats will be orally fed every day for a short time period and subsequently sacrificed in order to evaluate the acute effects. After the animal experiment has been terminated intestinal permeability will be examined as well as the immune effects in the intestine. This will be evaluated by different methods such as ELISA, qPCR, histology and other biochemical assays.
