Most bacteria are able to produce slime. Like slime of human origin, bacterial slime is mostly composed of long sugar polymers that are exported into the souroundings (exopolysaccharides). Cellulose produced by bacteria is slimy, and so is alginate. Slime production by bacteria is extremely important both medically and industrially. Most bacterial biofilms in humans are embedded in exopolysaccharides; and slime capsules (capsular polysaccharides) enable pathogenic bacteria to escape the immune system, and become resistant to antibiotics. But slime also has its good sides, and can be used as a substitute for fat in low fat food. Exopolysaccharides makes youghurt smoother, and gives low fat cheese a more normal texture.

Biosynthesis of Slime - The use nucleotide sugars as substrates. We have gained expertise by working with nucleotide metabolism, literally for decades, and we now want to expand this into the neighboring world of exopolysaccharides and capsular polysaccharides. _x000D_ EPS production is expensive to the bacterium as some of its best nutrients are thrown out into the medium as scafolds for biofilm or as protective barriers. EPS and CPS synthesis is therefore under control by intricate regulatory networks. We want to gain an understanding of the following questions:_x000D_ Under which environmental conditions is EPS and CPS production favored?_x000D_ What are the molecular mechanisms in this regulation?_x000D_ How can EPS and CPS regulation be modulated to lower antibiotic resistance and pathogenicity in bacteria?_x000D_ How can EPS and CPS regulation be modulated to increase production in industrial (dairy and medical) fermentations?
