are looking for a student that would like to do a project on product
development of water Kefir. The student should have a Biotech or Food-tech
background. The project is about how to control the development of the
fermentation process and to understand what factors influence the development
of metabolites, taste and aroma compounds. The aim will be to make some basic
experiments in small scale and then to try the best solutions at larger scale
in the DTU-microbrewery, and possibly with an external brewery.
course can be with or without ECTS points, i.e. it could be a special course (5
or 10 ECTS), bachelor or masters project or an extracurricular project. It is
together with a start-up company and DTU-Food.
