Vitamin D - producktion of new enriched products

Vitamin D is important for bones, muscles and immune system. World wide people are suffering from low vitamin D intake and status. In summer, vitamin D is formed in the skin by the sun's UVB rays. Vitamin D in foods is low and limited to animal products, and wild fungi. EU has approved marketing of mushrooms with content of vitamin D  produced by exposure of UVB lighting. Similar it is possible to increase vitamin D content in product of  pigs and chicken.

In the project you will work on the production of vitamin D through light, retention during cooking, chemical determination using LC-MS/MS technique, and marketing of the new products.
