Can you get allergy from eating quinoa

Problem statement

Quinoa has within the last couple of years gained a profound popularity as a “superfood” since quinoa has a high content of essential amino acids, lipids, vitamins and antioxidants. Is it without any concerns eating quinoa? Few cases of stomach ache and allergic reactions have been reported after eating quinoa.

 

Hypothesis

The hypothesis of this project is that there might be an allergenic potential of quinoa.

 

Aim of project

The aim of this project is to characterise the proteins in quinoa and to investigate the immunogenicity and allergenicity of quinoa proteins.

 

Methodology

Different quinoa samples and products will analysed in relation to protein characterisation by means of different gel electrophoresis. An animal model with Brown Norway rats will be conducted in order to evaluate the immunogenic and allergenic properties of quinoa. After termination of the animal study different biochemical assays will be performed such as various ELISAs, immunoblotting and in vivo tests.
