Enzymatic reaction in organic solvent

The ability of enzymes to work in non-aqueous media is now widely accepted and utilized in many biotechnological applications. However, in many cases the enzyme activity is lower than in aqueous media and the challenge remains to overcome this poor intrinsic enzyme activity in such dehydrated media. Numerous approaches have been used to increase enzyme activity, and one successful route has been the addition of different excipients during enzyme formulation (lyophilization). The ability to control the interplay between protein-water / excipients remains an elusive goal in protein science. We are particularly interested in: - Studying organic solvent effects on enzyme activity and specificity; - Investigating the effects on excipients on protein enzyme specificity and stability; - Designing enzymes with desired properties.
