HomeTOX - Contaminants from home cooked foods

MCPD and glycidyl esters are carcinogenic and under the regulation of the EU, however, their presence in home cooked foods is understudied.
 
This project aims to investigate the formation of the aforementioned chemicals contaminants in home cooked foods (i.e., cookies, grilled meat, etc.). This will be done by preparation of home cooked foods, following by chemical analysis using modern GC-MS/MS instrument.

The projected outcomes is expected to be highly beneficial for risk assessment of these carcinogens to the general population.
